A word of advice: try not to eat all the fried dumplings before they hit the curry (and I’m talking from experience here). It’s easily done, but friends and family may not forgive quite so easily. A handi is a round claypot that gives curries, daal and rice dishes a unique, earthy flavour. You could use an Indian or Chinese claypot (the kind used for making claypot rice). In the absence of these, a heavy-based casserole dish will do the job.
