I’ve never treated a head of cabbage with this much respect in my life. Give hardy Savoy cabbage a serious rani treatment with Mangalorean-style ghee-roast masalas. Massage the spices into the crevices of the cabbage and over every inch of its crinkly skin. Roast until the leaves wilt and become butter soft for a bountiful payoff.

  • 8 unsalted raw cashews
  • 1 tbsp coriander seeds
  • 1 tsp cu

Method

  1. Soak the cashews in hot water for 20 minutes. Drain and set aside.
  2. In a dry frying pan (skillet), roast the coriander seeds, cumin seeds, fennel seeds, black peppercorns, mustard seeds, fenugreek seeds, cloves, star anise and curry leaves over a medium-low heat for 6-7 minutes until toasted and aromatic.
