I take comfort in the fact that almost every culture and cuisine has a style of deep-fried bread they hold dear. Like a warm pillow of cosiness. India has a handful, from poori and luchi to fulecha and bhature. These fluffy and crispy bhature from North India are one of these wondrous breads that rise magically in hot oil.

Ingredients

  • 700 g (1 lb oz/ cups) self-raising flour

Method

  1. A day ahead, begin by stirring together the ingredients for the starter in a bowl. Cover with cling film (plastic wrap) and allow to stand in a warm place for a minimum of 8 hours.
  2. In a large bowl with high sides, mix the self-raising flour, semolina, sugar, salt, oil, yogurt, warm water and rested starter. Combine to form a shaggy dough and then knead for 10 m
