Kachumber is a haphazardly chopped salad that goes with just about everything. I like to add a fruity element to the traditionally spicy salad in the form of grilled nectarines. Grilling the nectarines takes a mere few minutes and lends a fruity caramelisation to this hero of the Indian side world.

Ingredients

  • 3 ripe nectarines, halved and pitted (stoned)
  • 1 tsp cumin seeds
  • 1 tsp

Method

  1. Preheat a griddle pan until smoking hot. Arrange the nectarine halves in the pan, cut-side down. Allow to cook until char marks appear. Remove from the pan and set aside to cool.
  2. Toast the cumin and coriander seeds in a dry frying pan (skillet) until fragrant. Coarsely crush them in a mortar with a pestle.
  3. In a bowl, combine the onion, tomato, toasted
