Ingredients: 50 g (1¾ oz/scant ¼ cup) unsalted butter, softened; 75 g (2⅔ oz) dark (bittersweet) chocolate chunks (optional – alternatively, use white or milk chocolate); 125 ml (4¼ fl oz/½ cup) double (heavy) cream; 250 ml (8½ fl oz/1 cup) whole (full-fat) milk, plus an extra 3 tbsp; 1½ tbsp cornflour (cornstarch); 30 g (1 oz/⅛ cup) caster (superfine) sugar; 150 g (5¼ oz) pistachio cream; 1 tsp almond extract; 2 tbsp roasted pistachios, crushed; A large pinch of edible dried rose petals (optional); 2 tsp icing (confectioners’) sugar, to dust; 4 large slices of white bread

The toasty top of a bread and butter pudding is the equivalent of a corner piece of brownie, or that craggy, cheese-crusted edge of lasagne. The crunchy corners of this one peek through a soft-baked pistachio custard like a shiver of sharks, fins exposed. Dust with icing (confectioners’) sugar and finish with crushed roasted pistachios. Dark chocolate (bittersweet) is optional, but highly recommended.
