To say that this recipe is anything less than mind-bending to perfect would be an epic understatement. After dozens upon dozens of tests, I have finally produced a plant-based paneer that I’d say is on a par with real-deal dairy paneer. My vegan paneer, or Fauxneer, is pleasingly creamy yet firm enough to use in curries and stir-fries, as well as to scramble for samosa and paratha fillings. It fries and grills, but it never melts, so it’s suitable for skewering to make vegan tandoori paneer
