Gunpowder, or podi, is a chief masala in South Indian cookery. It varies in hundreds of ways, calling upon various daals, aromatics and vegetables. Much like other masalas, there is no single definitive recipe. Each blend of gunpowder differs regionally, and from home to home. It can be used for cooking and as a condiment.
