Prepare the infusion of white stock and sweet red pepper as described for the butter-enriched method. Add 2 cups (500 milliliters) of reduced cream to the infusion, reduce if necessary, and finish the sauce with 2 ounces (60 grams) of butter or Sweet Red Pepper Butter.
