Method

Aïoli can be flavored with saffron by adding a pinch of saffron threads or powder to the garlicegg yolk mixture before adding the oil. When using saffron threads, soak them for 30 minutes in 1 tablespoon (15 milliliters) warm water and add both water and threads to the egg yolks. Do not add the saffron to the mayonnaise after the oil has been added, as it will take too long for the color and flavor of the saffron to dissolve into the mayonnaise.
