Most commercially available paprikas have so little flavor that the spice is used in the kitchen primarily for its color. Spanish pimentón, however, is smoked paprika and has a distinct smoky flavor that’s delicious in sauces. Some chefs prepare paprika butter, using 1 teaspoon (5 milliliters) paprika to 8 ounces (250 grams) butter, for coloring sauces at the last minute or for decorating soups.
