This butter can be used to add an extra dimension to fish sauces or can be served as is atop grilled or sautéed fish. Purée 4 ounces (125 grams) smoked salmon in a food processor. Work the paste with 8 ounces (250 grams) butter and strain the mixture through a drum sieve.
