Sea urchin roe has a delicate, almost sweet sea-like flavor, making it perfect for fish sauces. If incorporated directly into a hot sauce, it will curdle, so it should first be strained through a drum sieve with approximately an equal amount of butter by volume. Taste the sea urchin roe before using it in a sauce. If it has a strong, iodine flavor, it should not be used.
