Vinegar can be flavored with orange or other citrus fruits by allowing strips of zest to infuse the vinegar for several days. Citrus vinegars are especially lovely used on endive.

Method
- Peel the zests from the oranges with a sharp paring knife or vegetable peeler.
- Push the zests through the mouth of a vinegar or wine bottle. Pour over the vinegar, and cork the bottle. Let the zests infuse the vinegar for 1 week before use.
