Work the strawberries—frozen are fine if thawed completely—through a strainer or fine-mesh drum sieve. (A, B)
Adjust the flavor and consistency of the coulis with sugar syrup or water and lemon juice. To further clarify the coulis, if desired, use a Büchner funnel to suck the remaining coulis through the filter (see Funnels). Store overnight in the refrigerator.
