This is the bread of the nobility and upper bourgeoisie in days gone by and that of daily consumption in the Savoie nowadays.

Ingredients

  • 2 cups leaven
  • 2 cups each all-purpose and bread flours

Method

Follow the general directions given to prepare the bread dough, letting it rise, proof, then docking and baking it. This quantity will make 1 large crown 12 inches wide, or 2 large round loaves.
