The raclette is from the Valais, not from the Savoie, but has become extremely popular in modern Savoie, with many restaurants serving a more or less plentiful one. The best I know of in the two Savoie departments is at the interesting little Restaurant La Resse in Thônes; part of the dining room is built over a visible underground waterfall that, as late as the fifties, activated a little local woodcutting plant, or resse. Both the surroundings and the raclette are most enjoyable. T
