Make a well in the flour. Set 3 tablespoons of egg aside and pour the remainder into the well. Add the salt. Draw the flour into the liquid. Knead into a smooth dough approximately 10 minutes; flour your hands lightly if the flour is too wet or moisten them with egg if the flour is too dry. Cut the dough into 6 pieces. Pass each through the machine until smooth and dry; roll out into sheets ⅓2
