Again, who brought this completely Germanic preparation, exactly identical to the Alsatian Suri Ruwi, to the Savoie? Alamanni, immigrant or emigrant, or commercial traveler? My great-aunts in Alsace made exactly the same recipe with rutabaga. Use it with winter meats. The original description for this Savoie version of the dish is in Marie Thérèse Hermann; the caraway addition is mine.
