Verbena Mint-flavored Fava Beans

The Savoie does not use as many fava beans as other Romanized areas of France. Quite a bit of fava beans do come to market in the late spring, though, and the two very modem dishes that follow created a stir with my Annecy friends, as did all my other crunchy vegetables.
