See Marie’s story. This dish probably came into her life through her husband Paul Guimard, a native of Saint Pierre d’Albigny in the Combe de Savoie.

Ingredients

  • 4 tablespoons butter
  • pounds Red Bliss potatoes, peeled, quartered, and turned
  • Salt

Method

Heat the butter to the noisette stage in a 2-quart cocotte. Toss the potatoes in the butter until they start browning; add just enough warm water to cover them; salt and pepper them. Cover the pot and cook on medium heat 20 to 25 minutes, until all the water has been absorbed; let the potatoes stick to the bottom of the cocotte and brown. Turn the heat off.
