Use North American smelts that are as small as you can find, and the small lake perch (Perca flavescens) that, when it crowds our northern lakes in such quantity in April and May, remains tiny; the smaller the perch the softer the bones will be. If you can obtain roach in unpolluted waters, do not hesitate to use it, as well as any small fish you may be able to obtain in local water that you know are perfectly edible.
