Friends of mine rented a summer home in Courmayeur that had a huge vine running on a pergola and a trout pond next door. A quick fire of dried vine twigs in the chimney would yield these lovely fish, all black outside and dripping with juices inside. The same technique is used in vineyard areas of the Savoie. Keep your face away from the fire.
