This dish has been prepared successfully with salmon, arctic char, and lake trout. Gooseberries complement the flavor of coho salmon best. Sea green beans, called in French passe-pierres, are the tender shoots of seaweed. They are slowly appearing in better supermarkets. Darnes are pieces of large salmon fillets cut across the fillet.
