Monsieur and Madame Arnaud Goddet were the butchers who, during all my years of work in Annecy, served me with excellent meats. We used to chat quite a bit, and in the course of one of those conversations came this recipe:

Ingredients

  • 2 tablespoons butter
  • 2 large yellow onions, slivered
  • 6 shallots, slivered

Method

Melt the butter in a large skillet. Add the onions and toss them in the butter, add the shallots, toss them among the onions, salt and pepper well. Cover and cook until the vegetables are soft. Remove the pot lid and raise the heat slightly to color the vegetables lightly. Add the white wine, raise the heat again, and allow the wine to evaporate completely.
