A peasant dish par excellence, this preparation mostly applies to rabbit but can also be used for smaller animals such as squirrels and marmots, and to a cubed shoulder of deer or any other mountain goat. Marination should be 48 hours if you use farm rabbit. The following recipe is a composite of three different ones coming from Mélanie, Les Praz de Chamonix, and Courmayeur.
