Most Alpine lakes and streams, like our own Appalachian mountain streams, are full of small crawfish known as écrevisses à pattes blanches. Nowadays it seems less expensive to have crawfish flown in from Turkey than it is to run around the countryside gathering the local critters in remote streams. But occasionally, during the summer, when the airlifted supply is stretched to the limit by the tourist trade, a Talloires “mystery person” traps crawfish descended from a batch escaped fr
