In Savoie patois, the name croquemolles is applied to filberts, an aptly descriptive word since it means “soft chewing.” This tart, which has some of the same components as the Linzer Torte of Austria, has been commercialized under the name Régal Savoyard and varies greatly in texture and quality from one pastry shop to the next. This is my personal version.
