  • 2 cups less 1 tablespoon all-purpose flour
  • 1 tablespoon cornstarch

Method

Mix the flour and cornstarch. Divide the butter into 2-tablespoon portions. Sprinkle with the salt. With your fingertips, break up the butter and mash it into the flour until it is the size of large macadamia nuts.

Gradually mix in the ice cold water, using your fingertips. The pastry will make a large ball. With the heel of your hand, lightly push the ball of dough forward into large f
