This is mentioned in Arsène Bourgeaux’s essay (see Selected Bibliography) as being a star item in the country kitchen of the Arve valley, but Mélanie served it often, and it is really nothing more than one of the many versions of the bourre chrétien—type dessert found in the Savoie countryside and in all other provinces of France. This was the true delight of all children of my generation. Saffron and anise are special to the Savoie.
