Ingredients

  • ox head
  • cow heel or hough (shin of beef)
  • oatmeal
  • salt
  • water

Method

Put half an ox head or heel or a good piece of hough into a goblet1 with water to cover amply. Boil until an almost pure oil floats on the top. Put a handful of lightly toasted oatmeal into a bowl with a pinch of salt, dash upon it a ladleful of the fat broth, and stir it up quickly so as to form knots.
