  • fresh green peas
  • spring onions or mint
  • salt
  • pepper
  • butter
  • water

Method

Have a quart of peas, freshly picked and freshly shelled. (The smaller and younger the sweeter. When older and bigger, they are best used in soups.) Wash well and drain in a colander. Put into boiling water to cover, with one or two spring onions or a sprig of mint, a pinch of sugar, and salt to tast
