Method

Put a quantity of sids into the sowan-bowie (a narrow-mouthed wooden tub resembling a small barrel with an open end) or an earthenware jar, and pour over them twice their bulk of lukewarm water. The sids rise to the surface and must be pressed down with a spatula or the back of a wooden spoon until all are wet. Leave them in a warm place until they are quite sour.
