Halibut is a very gently flavoured fish so it works really well with this creamy but zingy lemon sauce. With some crushed baby potatoes and a big pile of sweet roasted veg, this is a delicious, super quick and easy dinner.

Ingredients

  • a splash of vegetable or rapeseed oil
  • 4 skinned halibut fillets (approx. 150

Method

Put a frying pan on a high heat and add a splash of oil. Run your fingers along the halibut fillets to check for bones.

Once the pan is hot, place the halibut fillets in and season. Don’t move them around the pan, just leave them to cook for a couple of minutes. Once the halibut starts to brown on the bottom, flip over, season and turn the heat down to medium. Cook for another two or th
