Spineys, also known as squat lobsters, are hard to find. They are only caught on the west coast of Scotland and if you are lucky enough to find some, buy them. They are truly delicious - we think they’re even better than langoustines. There’s no market for them as they don’t keep well and go black quickly, so they are a true local delicacy. Cook them and eat them on the same day for a real treat. You need about 40 spineys for four people.
