Name: Tomato and Coriander Salsa

Ingredients: salt and pepper; ½ red chilli, finely chopped; small handful of fresh coriander, finely chopped; juice of ½ lime; 6 super ripe tomatoes (or 30 cherry tomatoes), chopped; ½ tsp sugar; ½ small red onion, finely chopped; 1 garlic clove, crushed then finely chopped

This is such a lovely light and tangy salsa, and it gives a super fresh taste to any pan-fried fish.

Ingredients

6 super ripe tomatoes (or 30 cherry tomatoes), chopped
½ small red onion, finely chopped
