This is a great way to turn mashed tatties into something posh and completely delicious!

Ingredients

  • 1.5 kg white potatoes
  • 100 g butter
  • 1 leek

Method

Peel and halve your potatoes, place in a pan and cover with cold water and a couple of pinches of salt. Place on a high heat, bring to the boil and simmer until cooked. While your potatoes are cooking, put a frying pan on a high heat and melt your butter. Turn the heat down to low and add your leeks, frying them off until they’re soft.
