This recipe showcases chicken wings, often overlooked in favour of prime cuts. The brining gives juicy flesh with crispy skin, well worth the effort of planning ahead. You can serve them either straight up or toss them in this glaze, which is a favourite in our house.

Ingredients

For the brine

  • 200 g/7 oz light muscovado sugar
  • 300 g/10½

Method

First, make the brine. You may want to do this the night before cooking to allow time for it to cool. Put all the brine ingredients and 2 litres/70fl oz water into a large saucepan and heat, stirring, until the salt and sugar have dissolved. Remove the pan from the heat and leave to cool.

Put the cooled brine and chicken wings into a large non-reactive food container, cover and store in
