This is a wonderful way to start a summer supper – not least because it looks incredibly beautiful. Radishes in our house are often eaten raw with butter, and, you guessed it, flaked sea salt, but occasionally we like to cook them for something different. Brining the radishes before grilling gives them a lovely texture and enhances their distinctive flavour. We serve them with this fresh almond sauce, which is a savoury revelation alongside the mellow, peppery radishes.
