Preserving limes changes their character entirely, into something nearly sherbety, with a distinct flavour. Amazingly, all you need is salt and time. It’s best to use organic, unwaxed limes here, as pesticides can affect the flavour, which would be a shame after being patient for all that time!
Scrub the six freshest-looking limes dry with a clean tea towel and cut a deep cross in each, coming to within 2cm/¾in of the base, to open up the fruit but not to separate it into pieces. Spoon 1 tablespoon of the salt into the cut centre of each lime. Press down into a sterilised 1 litre/35fl oz preserving jar, nestling the chilli and spices among the fruit as you go.
