  • 100ml Champagne vinegar
  • 250ml Water or chicken stock
  • 150ml Extra virgin olive oil
  • Juice of 1 lemon
  • 1 Bay leaf
  • 1 pinch Saffron threads
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme
  • 4 Garlic cloves, crushed
  • 20 White peppercorns
  • 20 Coriander seeds
  • pinch Maldon sea salt


Combine all the ingredients in a heavy-based saucepan and simmer over a low heat for 20 minutes. Remove from the heat and allow to cool. Remove the rosemary, thyme, bay leaf and garlic and discard. Store the a la Grecque in a parfait jar and refrigerate until ready to use.
