  • 70 ml Cabernet Sauvignon vinegar
  • 70 ml Extra virgin olive oil

Method

Mix together the vinegar, oil, sugar and herbs in a bowl and lightly season with salt and freshly ground pepper. Allow to infuse at room temperature for 1 hour.

Preheat the oven to the lowest possible setting. Score the tomatoes and blanche in boiling water for 15 seconds or until the skins start to come away. Refresh in iced water. Peel the tomatoes, cut in half lengthways and remove t
