Mix the sugar, water, lime juice and zest together in a heavy-based saucepan. Stir over a medium heat until the sugar has dissolved. Bring to the boil, reduce the heat and continue to cook for 3 minutes. Skim off any scum that rises to the surface. Transfer the syrup to a clean bowl and allow to cool. Allow the lime zest to infuse and flavour the syrup. Store in a sealed container in the fridge. Pass the lime syrup through a fine sieve when ready to use and discard the zest.
