Coffee Syrup

• 350 ml Sugar syrup
• 100 ml Strong espresso coffee

Bring the sugar syrup and coffee to the boil in a heavy-based pan. Reduce the heat and simmer for 5 minutes. Pass the coffee syrup through a fine sieve into a sealed container and refrigerate until ready to use.
