Sushi always feels incredibly healing to me – just what you need to reset at the start of the year – and using smoked salmon means it’s much more accessible to make at home.
Put the rice in a bowl and cover with cold water, then vigorously stir with your hand. Drain it in a sieve and run under cold water until the water runs clear, stirring with your hand as you do so. Tip the rice into a small saucepan with 185ml water and the salt. Cover and bring to a simmer, then turn the heat to low and cook for 10 minutes until the water has mostly been absorbed.
