Roasting the beetroot adds a little more effort to this recipe, but it is absolutely worth it for the deep, earthy flavour and vibrant colour you get. However, if you need a dip in a hurry, just sub in the same weight of ready-cooked supermarket beetroot and it will still be super tasty. Feel free to leave out the feta if you would like to make this recipe dairy free or vegan.
