The best summer flavours all seem to come from the hottest countries and this Thai number is no exception. Sweet, salty, sticky pork mince plus sharp, sweet and juicy pineapple – it’s the perfect mouthful. I used to teach a Thai cookery class here in Bristol and the students always absolutely loved this one! Feel free to add more or less chilli to taste.
