A takeaway classic for very good reason. I use a lot of ginger in the aromatic prawn paste, which gives it a spicy freshness, the perfect foil for the deliciously oily toast. Don’t worry about using any fancy bread here – regular soft white bread is exactly what you need.

  • 25 g fresh ginger, peeled and chopped

Method

To make the prawn toasts, put the prawns, ginger, garlic, spring onions, cornflour, sesame oil, soy sauce, rice vinegar, egg white and a pinch of salt in your food processor. Pulse this mixture several times, scraping down the sides if needed, until you have a spreadable but not completely smooth mixture. Spread a thick layer on each slice of bread.
