A takeaway classic for very good reason. I use a lot of ginger in the aromatic prawn paste, which gives it a spicy freshness, the perfect foil for the deliciously oily toast. Don’t worry about using any fancy bread here – regular soft white bread is exactly what you need.
To make the prawn toasts, put the prawns, ginger, garlic, spring onions, cornflour, sesame oil, soy sauce, rice vinegar, egg white and a pinch of salt in your food processor.
