Incredible as a dip, in a sandwich, on flatbreads. . . This does make a lot, but it keeps really well in the fridge for up to 3 days and – more importantly – is so delicious you are unlikely to have it hanging around for long. Just let it come up to room temperature before you serve it, then loosen with a little more olive oil if it has thickened up too much.
