Literally a doddle, just blitz the ingredients and give them a very quick knead and you’ll have delicious cheesy biscuits in minutes. Feel free to swap the thyme for another herb – rosemary or sage also work well. Don’t overwork the dough while kneading as this can make the shortbreads tough.

  • 100 g plain flour
  • 100 g unsalted butter, softened

Method

Put the flour, butter and Parmesan into a food processor, then add the thyme, egg yolk, salt and nutmeg. Blitz until it is just coming together into a dough, then tip onto your work surface and knead into a ball. Use your hands to roll the dough into a log about 4cm wide, then wrap in cling film and chill for an hour until firm.
