Mark Jensen: Chao ga is such a versatile delight. It is eaten mostly for breakfast with a side dish of trung chien thit bam (pork and salted radish omelette) or thit kho trung (caramelized pork with egg, chilli and black pepper). On its own, it can be consumed to help recover from a stomach upset or the common cold — in this latter instance, a fair amount of ginger can be added to help clear
